Salmon Pasta in Non-Dairy Cream Sauce

Here's a recipe that will make both the dairy eaters and those who don't eat dairy happy. I'm sure it would also be delicious made with dairy ingredients instead of the substitutes but since I can't have dairy I've never tried it. Please let me know in the comments how it works for you if you try it!

Salmon Pasta in Non-Dairy Cream Sauce

Ingredients:

  • 1 lb box dried pasta (I used Rotini)
  • 1-1/2 lbs salmon fillet
  • Olive oil, kosher salt, pepper, and granulated garlic to taste
  • 1 large yellow onion, diced
  • 2 Tbsp oil
  • 1 tsp kosher salt
  • 2 Tbsp flour
  • 2 cups parve milk
  • 1/2 container parve sour cream (6 oz)
  • 2 Tbsp cream cheese
  • 1 Tbsp lemon juice
  • Salt and pepper to taste
  • 1/3 cup reserved pasta water

 

Instructions:


Salmon:
Drizzle with olive oil, sprinkle salt, pepper and granulated garlic.
Bake at 400 for 20-25 minutes until opaque.
When cool enough to handle, gently break apart the salmon into flakes removing skin and any bones.
Set aside.


Cook pasta in salted water as per directions on package reserving 1/3 cup pasta water

Saute onion with 1 tsp salt in oil until translucent about 5 minutes.
Add flour, cook one minute stirring constanly.
Whisk in milk and bring to a simmer.
Add sour cream, cream cheese and lemon juice. Add salt and pepper to taste

Remove sauce from heat and add drained pasta and reserved pasta water. Return to heat and bring to a simmer, mixing constanly to allow sauce to thicken slightly and coat pasta fully. Remove from heat and add salmon flakes mixing gently to combine.
